Period and Method of Grape Harvest: First half of September, by hand.
Vinification: Grapes must be de-stemmed and crushed, followed by a cold maceration of grape skins and alcoholic fermentation in steel at a controlled temperature between 16 - 18 degrees centigrade. The wine matures for six months in stainless steel containers on top of its own fermented lees.
Bottling: After bottling, normally taking place in the spring following the grape harvest, the wine ages in the bottle for 2 months.
