Period and Method of Grape Harvest: First half of September, by hand.
Vinification: The vinification requires that the grapes be de-stemmed and crushed, followed by a cold grape skin maceration, and fermentation in 5 liter casks of French oak and Acacia. The wine matures in wood for ten months on top of its fermentation lees.
Bottling: After bottling, normally taking place in the spring, following the grape harvest, the wine ages in the bottle for 6 months.
